A Google search on "that's how you spell Chicago" is a bit baffling.  But it seems to be an old expression or a line from an old song that actually goes "Chicken in the car and the car won't go, And that's how you spell Chicago".  Apparently, it was spoken in A River Runs Through It.
 
It makes no sense.

I'm guessing it's just some goofy little rhymey-thing some Chicagoan probably made up decades ago.

There's some other similar thing I've heard regarding some city with a funny sounding name, but I can't remember it.

Glenn Miller recorded 'Chattanooga Choo-Choo' and "Kalamazoo' in the '40s.

The 'Chicago' thing is even older than that, maybe the '20s...heard it in one of the black and white 'Popeye' cartoons when those used to be rerun on TV in the '70s.

I used to watch some series of Max Fleischman-ish cartoons from maybe the 1940s when I was a kid, that would highlight a song from the era, displayng the lyrics at the bottom of the screen---and a bouncing ball would jump from one word to the next.  The one I remember most was Glow Worm.  I guess I was just starting to read and was able to follow that bouncing ball and sing along.
 
I'd love to see that cartoon again.

Max Fleischer?

I remember some kind of 'sing along cartoons', might have been made by Paramount(who took over Fleischer's operations in the 40s). Not sure I remember a 'Glow Worm' one; I learned that song from 'The Muppet Show'.
